BHAJIA

Ingredients

• 2 onions • 5 cloves of garlic • few spinach leaves (or mchicha leaves) • 3 potatoes • salt • pepper • 1 teaspoon of baking powder • 200g gram flour

Slice the potatoes thinly and cut the onions . Crush the garlic with a mortar until it turns to mush. Put everything in a large bowl and add gram flour and baking powder.
Mix to have a slightly thick batter and add some water at a time until you have the right consistency. Add salt and pepper. With your hand give it a good mix.

Set up the frying oil.
Take the potatoes slices and dip them into the batter making sure they are well coated before adding them to the hot oil.
Cook the bhajias on each side until they are golden brown and crispy on all sides.

BHAJIA are a fantastic snack extremely popular in East Africa and a well liked street food in Kenya.
