The joy of food…

...from the wild and beautiful fragrant orchards and lines of herbs and spices, the scent of cinnamon or a hunt of ginger, a brush with vanilla and the beautiful Bergamot flavours emanating from beautiful kitchen that overlooks a garden in the wild, freshly chopped cloves from the spice islands and hints of Zanzibar, the wind blowing across fields of parsley and thyme, we are all in love with the idea of cooking, so i’m taking you on a culinary journey that will cross all boundaries of taste.
Food is life and meals bring people together.

When you return from a game drive or a walk in the bush, that surprise bush breakfast or spontaneous lunch is simply heaven!
African chefs are always happy and some of the kitchens are very simple, often even a tent in the Serengeti. After having worked in different kitchens in Africa, i have learnt to work with the very basic essentials.
spending time with Africans in their home has given me a sense of understanding how wonderful they are with very little.
These precious moments are inked on my soul.

For the dough: 600g flour • 1 egg • 80g butter • 70g sugar • 1 teaspoon of salt • 120g warm water • 130g warm milk • vanilla essence • 1 teaspoon ground cinnamon • 2 teaspoon of dry yeast For the filling: 100g brown sugar • 100g melted butter • 2 tablespoons ground cinnamon For the icing: 150g icing sugar • vanilla • water q.s



• 120g butter • 2 eggs • 4 tablespoon of sugar • 4 cup of raising flour • 15g yeast • ½ cup of warm milk • salt • 20ml oil • 100g raisins • 70g chocolate chips • orange zest
